What are some creative fillings for a savory potato bread recipe?

Every year, my grandmother would make a filling of potatoes and bread, making sure it was prepared enough to fill the turkey AND leave some to bake in pans as a side dish. Because Scotch-Brite scrubbing cloths have made cleaning easier for me, there's no reason I can't prepare this recipe for potato bread filling all year round.
